    Fit fuel: Baked Salmon

    INGREDIENTS:

    Four salmon fillets, ~6oz each
    Two tbsp olive oil
    1/2 tsp salt, or to taste
    1/4 tsp cracked black pepper, just a pinch if using finely ground black pepper
    2 tsp minced garlic
    1 tsp Italian herb seasoning blend or 1/4 tsp each dried thyme, parsley, oregano, and basil
    1 medium lemon

    DIRECTIONS:

    1. Preheat oven to 400 degrees F and grease a large baking pan. Arrange salmon fillets on the baking sheet, season to taste with salt and pepper.
    2. Stir olive oil, garlic, herbs and juice of half the lemon. Spoon marinade all over salmon fillets to thoroughly season the salmon. Thinly slice remaining half lemon and top each piece of salmon with a slice of lemon.
    3. Bake for 15-18 minutes until salmon is opaque and flaky when pulled apart with a fork. You can broil the last 1-2 minutes for an additional crisp, if desired.
    4. Garnish with fresh thyme or parsley.
    5. Serve and enjoy!
